We Make Food!

We have been trying to make things from scratch so we aren't eating a bunch of processed foods and it's working out pretty well. If anyone has any simple from scratch meals that they love please share!

  1. White Chicken Chile
    Ingredients:
    Onions
    Garlic
    Celery (thinly sliced including leaves)
    Chicken
    Water or chicken stock (about 2 cups)
    Great Northern Beans
    Pepper Jack Cheese
    Hot Pepper Flakes
    Directions:
    Cut up the raw chicken into bite size pieces. Saute onion, garlic and celery, then add the chicken and cook through. Add water or chicken stock and undrained beans. Heat thoroughly, but do not boil. Cut up the cheese into cubes, or grate, and add to pot. Let the Cheese melt and add pepper flakes to taste. Add more water or stock if it's too thick. Salt and pepper if needed.

  2. Bean and Vegetable Salad (can be used as an entree - very filling)
    Great Northern Beans - 1 can
    Red Beans or Pinto Beans - 1 can
    Garbanzo Beans - 1 can
    Celery - 2 stalks
    Red Onion - small or half
    Green Sweet Pepper - small or half
    Yellow Sweet Pepper - small or half
    Red Sweet Pepper - small or half
    Basalmic Vinegar or Lemon Juice
    Olive Oil
    Salt and Coarse Pepper to taste
    Basil and Oregano to taste (or other herbs you like)
    Variations:
    Add Cucumber, Avacado, Cherry Tomatoes, Mozzerella Cheese, Kalamata or Black Olives, Salmon, Black Beans, etc...

    Dice all vegetables. This recipe makes a lot because there are so many cans of beans in it. There is plenty to share. I don't add avacado or cucumbers the first day if I know it will sit overnight. Refresh it the second day with another splash of Oil and Vinegar/Lemon Juice. Serve some Artisan Bread, and Butter or Cheese with it. Yum!
